It Was All About The Food

 

Oh my Great Aunt Suzy ... which I never had ... being sick is a big pain in the patoo.  I've taken all the recommended medications and then some, with no results whatsoever.  Oh maybe I'm not coughing quite as much, but I expect miracles overnight!  That doesn't seem to be happening.

It's definitely a cold since I'm all about the food.  That also seems to be the case with Kitters, though I expect that from her since she was starving.  Every morning after spending the night on her outdoor table bed, she wants in the second I open the door for Cooper.  In two seconds, she's back at the door wanting out so she can have her extra little handful for breakfast.  She purrs the entire time.

Me ... I was also obsessed with food.  I think that's because I don't feel like doing a darn thing and I can't stand not being busy.  I used up the rest of the bacon in the quiche ... so more bacon was required since I found three more tomatoes on the vines.  That took all of 20 minutes in the air fryer.


I watched the Peace Agreement signings ... something that will go down in history, like when they broke down the Berlin Wall.  It seems to me our generation has lived through some of the most historical happenings of any generation.  Maybe everyone says that.  I pray it continues for the people who live there and the hostages that returned alive.  I always wondered how the world would be with a businessman in charge instead of a politician.  Peace in the Middle East ... the first in 3,000 years.  Hopefully it sticks.  Walk softly and carry a big stick.

Let's celebrate with a big fat pan of chocolate toffee deliciousness.  Actually, I admit I thought I was making something else.  Turns out these were not it, but they are WONDERFUL anyway.  It's got a cookie base covered in sweetened condensed milk, toffee chips, chocolate chips (I used dark chocolate), with more toffee for good luck.


It took me 15 minutes rearranging the freezer to make room for them to cool down and be cuttable.  I didn't want to wait for the taste test.

Oh yeah ... they were the perfect treat to make the cold symptoms go away.  Not really, but at least it got my mind off it for 15 minutes.  


Boring is all I can say about the entire rest of the day.  BORING with a capital B.  I must have walked around the kitchen 25 times.  My watch says I walked a mile around the kitchen island.  I spent the first hour cancelling the Vet appointment and trying to do something with the four day reservation in Moss Landing that starts tomorrow.

I called my friend Renate who has the same rig as mine, thinking since she travels a lot more, and mostly by the ocean, that she might be able to go.  The answer was a resounding YES.  I had my doubts, but surprisingly, the KOA park agreed to transfer the reservation to her membership.  YAY ... I was lucky to sneak out from under that one.  I'll go again soon ... when I feel better.

That brought about the last food item of the day ... and it was SPECIAL.  This is the crockpot pork with too many chilis, doctored up with fried corn.  No kidding .. you want that can of corn to be oh so tasty ... fry it up in a little butter until browned.  

Next up .. more butter in the same pan to fry the tortillas to browned goodness with the pork and corn ... adding in some cilantro for extra flavor.  I'm one of the weird ones who likes cilantro.  I'll be doing this again VERY soon,  They were delicious!!!


That was it for the day.  Unfortunately, it rained HARD most of the night, keeping me wide awake from the sloshing in the downspout.  Even with earplugs, my eyes stayed open.  

The good news ... I'm not coughing quite as much this morning ... YAY ... and I've got tacos and toffee bars to consume.  No bingo ... I called three people last night to take my place.  They will survive without me!!!

  1. So sorry you are battling a cold but I remember you saying you wished for more 'down' time..........try and enjoy those books. :) Not surprising that it takes 3 people to replace you at Bingo! ♥
