HAPPY EASTER!!

Good Easter Morning to you!!!  A day to be thankful for He is Risen! 


A quick check of the back yard found this trio of beauties, with at least 20 more ready to pop.  I'm guessing it's going to happen today ... just in time for Easter.


This guy?  I've no idea where HE came from, since everything in this flower bed is supposed to be twinsies of the one above.  


It was a gorgeous sunny day on Saturday, perfect for a run around the block.  I do think however, I have finally given up the RUN part.  We walked ... fast ... too fast in fact, because by the time I got back, I was exhausted.  I really need to do that more often.

Speaking of plastic eggs ... here was a pile of them that gave me a good laugh!!  I didn't have enough nerve to open one ... I just left them, making sure Cooper didn't get too close!!  Do you think there's chocolate in them????


Back home, I finally got up the strength to cook that huge Costco ham.  I read where you could heat it up in a smoker for a little extra flavor.  I mean really, it's already smoked, yes?  The thought of no cleanup quickly won out. 

Into the smoker it went with just a bit of apple wood.  That long cord is my thermometer.  It doesn't get any easier than this.  


While the ham was cooking, the kids took a nap.  Mr. Cooper seems to do more sleeping than ball playing nowadays, which makes me sad.  Then he makes me smile because this is what he does if I move even a fraction of an inch.  BE STILL MOM!!  He moves to the other side of the couch.


Fifty year old Jonathan sleeps a lot also ... until about 4:00 when he begins talking up a storm.  Disco ... here kitty kitty, I'm hungry, pretty boy!!!  It goes on for about an hour.  If he doesn't get a response, he gets VERY loud!!  

It is interesting to note that all three of us can't hear well, can't see well and want to sleep a lot!!  LOL


Since I had plenty of eggs, I whipped up some deviled ones.  It was a big mistake to put paprika on them.  I don't remember when I used that stuff last, but it must have been ten years ago.  It tasted awful!!  


At long last ... ding ding ding ... the ham is DONE!!  How did I not know how hard it is to cut ham from a bone?  It didn't help that it was a sticky mess from the sweet sugar coating I smeared all over it.  I trashed it quite nicely getting the meat off.


At last ... dinner!!  Yes, I scraped the paprika off the eggs before eating.  Lookie here ... no potatoes, no yams ... all diet stuff!!!  By the time I ate all that ham, I was stuffed to the gills.  


It was then I realized I have enough ham left over to feed an army.  So what goes good with ham?  Mac n cheese of course ... a weight producing concoction that is NOT on my diet.  I may just have to cheat a little.  Any other ideas about what to do with ten pounds of ham?

There were no quilts stuck with needles on this day, nor any fabric cutting done.  It was a nice break in my routine.  I'm sure that's because I was distracted by watching a little (actually a LOT) of rodeo!!  

No chocolate Easter bunnies were dismembered on this day.

    With ham leftovers, I wrap portion size slices in Saran wrap and then put them in a zip-lock bag in the freezer, pulling one pack out at a time for a meal. You can buy a bag of 15 Bean Soup beans and with the ham bone it will make a wonderful soup. Leftovers of the soup can be put in zip-locks and laid flat in the freezer. Good luck.

    A pot of bean soup or black eyed peas or a boiled dinner with
    potatoes, carrots and cabbage and a chopped onion.

    Pea soup! Yum!! Or any soup with the ham bone.
    The Easter Bunny did bring us each a solid chocolate bunny. His did he know I was craving chocolate??

  7. Eggs. Ham & cheese omlette, scrambled eggs with ham, fried eggs with ham. Don't forget ham salad if you have a meat grinder. My favorite with a little pickle relish (now using a little plain greek yogurt for the mayo).
